Grape varieties: Mainly centenaries Grenache (80%) complemented by 10% of Mourvedre more then eighty years old—10% of Syrah (50 years old) - high density
vineyards—very low yield (one bottle per vine).
Characteristics: The wine offers a deep color, almost black,. On the nose the wine is complex and layered offering red and black fruits, spices, garrigue. The mouthfeel is ample and powerful yet with a good balance and a very long finish on black fruits and stouch of saltiness.
Maturation: Ageing for 15 months : - 1/3 of new barrels (stockinger n barrels with a very low toasting) - 1/3 of concrete tanks - 1/3 vat
Food pairing: Rack of lamb with thyme - Roasted duck - - Strong cheese.
